It is widely grown in the Mediterranean region. Fennel is an annual crop planted for its thickened bulb-like base of the leaf stems and grows best under cool weather. It has a very aromatic, distinct anise-like flavor and odor. Fennel is consumed as both boiled vegetable and raw in salads with other vegetables.
